Happy Friday!

It’s hard for me to believe, but it’s been over a month since I last did a Friday Favorites update. Crazy how time flies.

So today, I thought it was due time that I clue you in on the things I have been loving lately.

  1. Edamame

We are finally beginning to see some warmer days here in Madison, and with this warmer, dare I say “springier” weather, I find myself craving big salads full of fresh, crisp veggies and…edamame! I had a bag of the frozen stuff chilling in the freezer for a while, when one night I spotted it and knew it would make a great addition to the salad I was planning for lunch. It takes an ordinary salad and just steps it up a bit. Not to mention it packs a powerful protein punch as a ½ cup serving contains 8 grams of plant protein, making it a perfect vegetarian protein option.

So what happened to the sun? Seriously, where did it go??

I am so over these cloudy, cool, and drizzly mornings we’ve been having here in Madison. Give me back that sunny, 60-degree weather we had a few weeks ago. Or better yet, just give me summer!

Well since you can obviously tell I have not been enjoying the recent weather we’ve been having, let me tell you about something that I have been loving lately: breakfast.

DIY Spiced Popcorn – 5 Ways

Today, let’s talk popcorn, one of my favorite snacks that, sadly, I often forget about.

Popcorn is deliciously nutty and crunchy, can be salty or sweet, and, to many people’s surprise, is a whole grain! Basically, it’s the perfect snack to satisfy any craving while still offering some quality nutrition, just be mindful of your portion size – once you start munching it can be hard to stop!
